     Apple Pie

Ingredients
Pastry for two-crust pie
1/3 to 2/3 cup sugar
1/4 cup all-purpose flour
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
dash of salt
8 cups thinly sliced peeled tart apples(8 medium)
2 tablespoons stick butter or magarine
2 to 3 tablespoons lemon juice
 

Instructions
1. Preheat oven to 425 degrees Fahrenheit. Prepare pastry.
2. Mix sugar, flour, cinnamon, nutmeg, and salt in a large bowl. Stir in apples and add lemon juice. Let sit till a little liquid forms in bowl. Turn into pastry lined pie plate. Dot filling with butter.
3. Cover with top pastry; seal edges and crimp as desired. Cut slits to allow steam to escape. Brush surface with egg wash, if desired.
4. Cover edge with 3-inch wide strips of aluminum foil to prevent excessive browning. Remove foil during last 15 minutes of baking. Bake pie 40 to 50 minutes or until crust is brown and juice begins to bubble through slits in crust. Cool in pie plate on cooling rack. Serve warm if desired.
