Spinach, Feta, and Bean Frittatas

1-10 ounce package chopped frozen spinach, thawed
|

1 teaspoon nutmeg
|
|
5 oz reduced-fat feta, crumbled
|
|
1-15 ounce can red kidney beans, drained
|
|
Small bunch of green onions, finely chopped
|
|
2 cloves of garlic, finely chopped
|
|
¼ cup of canola oil
|
|
5-omega-3-enriched eggs, lightly beaten
|
|
Salt / Pepper
|
|
|
|
¾ cup of self raising flour
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|
|

Instructions |
|
|
Preheat the oven to 350F.
Lightly oil 8X3/4 cup capacity large muffin tins.
|
|
|
In a large mixing bowl, combine the spinach with nutmeg, feta, beans, green onion, and garlic.
Stir in the canola oil, eggs, salt, pepper and flour.
|
|
|
Fill the 8 muffin tins and bake immediately for 35 – 40 minutes, till golden brown and puffy.
Serve hot or cold.
