     Spinach, Feta, and Bean Frittatas

Ingredients
1-10 ounce package chopped frozen spinach, thawed
1 teaspoon nutmeg
5 oz reduced-fat feta, crumbled
1-15 ounce can red kidney beans, drained
Small bunch of green onions, finely chopped
2 cloves of garlic, finely chopped
¼ cup of canola oil
5-omega-3-enriched eggs, lightly beaten
Salt / Pepper
 
¾ cup of self raising flour

Instructions
Preheat the oven to 350F. Lightly oil 8X3/4 cup capacity large muffin tins.
In a large mixing bowl, combine the spinach with nutmeg, feta, beans, green onion, and garlic. Stir in the canola oil, eggs, salt, pepper and flour.
Fill the 8 muffin tins and bake immediately for 35 – 40 minutes, till golden brown and puffy. Serve hot or cold.
