Preheat the oven to 250 F. Spray two (15x10x1-inch) baking pans with nonstick coating spray.

Separate eggs in a large bowl. Whisk egg whites. Add champagne or ginger ale, salt, cinnamon, ground ginger, sugar and nut halves. Fold mixture together until the nuts are evenly coated.

Spread the mixture out evenly onto the baking pans. Bake at 250 degrees F for 1 to 1 1/2 hours until the coating is absorbed and the nuts appear dry, stirring occasionally to prevent sticking.

Remove from oven and separate the nuts into a single layer with two forks. When nuts are cooled, store at room temperature in an airtight container.
NOTES
I've had success with baking at 300 F for shorter cooking time.
May substitute water for the ginger ale.
May omit whisking egg whites and/or use egg whites from carton.
Avoid placing pan(s) near oven's heating element (top or bottom); nuts scorch easily.
Double amount of dried ginger for extra-strong flavor.
