     Banoffee Pie

Ingredients
Frozen pie shell (prepared according to package directions)
1-2 bananas, sliced
1 can of sweetened condensed milk
1 small carton of whipping cream
instant coffee (optional)
 

Instructions
First step is to take the paper label off of the sweetened condensed milk (i.e. Eagle Brand), place it in a pot large enough to completely cover with water. Then boil the can for three hours. This can be done ahead of time and these cans can then be stored on your shelf for up to 6 months so I always have one ready to go. Boiling the can of sweetened condensed milk turns it into toffee. Yummy
Into pie shell that has been baked for a few minutes according to package, place sliced bananas so that there is a reasonable layer. Then scoop in the toffee (boiled sweetened condensed milk) and cover bananas. Whip the whipping cream with 1/2 tsp of sugar in it (use real whipping cream, Cool Whip is too sweet). At this point, you could add a little coffee essence or instant coffee but we're not coffee lovers so we leave it out. Spread the whipped cream on top of the toffee and you're done. Soooo good and a sure hit every time.
