     Veggie Lasagne

Ingredients
250 g fresh mushrooms, thinly sliced
2 carrots shredded
4 spring onions finely chopped
1 garlic clove minched
60 ml (2 tbsp) oil
1 can crushed tomato (large can)
1 can tomato paste
Pepper to taste
125 ml red wine vinegar
 
500g ricotta cheese
60ml grated parmesan
2 pkgs chopped spinach (thawed and drained)
1 egg lightly beaten
15 mL fresh basic chopped
pinch of nutmeg
Lasagne noodles
500g Mozzarella (I use more)

Instructions
Saute mush, onion, garlic in oiladd carrotsadd crushed tomato, tomato paste, red wine vinegar and peppersimmer uncovered for 20 min stir frequently
In bowl combine, Ricotta cheese, parmesan cheese, spinach, egg, basiland nutmeg, whisk to blend
In DishLayer as follows 1/4 sauce on bottom Noodles 1/4 sauce Noodlles All Cheese mixture Noodles 1/4 sauce 1/2 mozza noodles 1/4 sauce mozza
Bake at 375 F for 35-40 min can use tin foil on top, then remove forthe last 10 mins, if cheese isn't browning, can put under broiler fora few minutes.
