Soak beans as directed on package. Drain and rinse well with clear water. Drain.
Combine all ingredients in large crock pot and cook on low for 8 hours. Half way through, you may remove shank and cut away meat. Cut into bite-sized pieces and return only meat to soup.
You may also mash 1 or more cups of the beans at some point. I don't do this.
