     Yorkshire Pudding

Ingredients
1/4 c roast beef pan drippings
1 c flour
1/4 tsp salt
2 eggs
1 c milk
1 tbl snipped fresh chives
1 tsp fresh thyme leaves or 1/4 tsp dried
 

Instructions
Preheat oven to 450 degrees.
Spoon 1 tsp of drippings into each cup of a 12 cup muffin tin. Place the tin in the oven to keep the drippings hot while the batter is being prepared.
Combine flour and salt in mixing bowl. Beat eggs and milk together in another bowl. Make a well in the center of the flour, pour in egg mixture. Combine ingredients with a few swift strokes.
Spoon batter into muffin cups (they should be about 1/2 full). Sprinkle with herbs. Bake until puffed and golden about 15-20 minutes. Serve immediately.
