     spinach salad with grilled mediterainian vegetable

Servings   4-6 people.

Ingredients
1 orange bell pepper
2 large porobello mushroos
1 summer squash
1 can artichoke hearts
1/4 cup olive oil
salt and pepper to taste
1/4 cup kalamata olives
3 cups baby spinach
1 cup packed basil leaves.
 

Instructions
slice pepper, mushroom, and squash into a bowl. add olive oil, salt and pepper to taste. place grill pan on medium heat.
cook mushrooms 5 minutes per side peppers and squash 3 minutes per side.
place all peppers and squash in a bowl and cool slightly. add olives, spinach, and basil. toss and add more oil, salt or pepper if needed.
