Combine brine ingredients in stockpot. Boil until solids are dissolved. Cool to room temp and refrigerate. Combine brine and water in bucket, add turkey, breast-side down. Let sit for approx 6 hours, turning once.
Heat oven to 500. Combine apple, onion, cinnamon, and water, and microwave 5 mins. Rinse turkey. Pat dry in pan, cover with canola oil.
Roast for 30 min, or until golden. Cover breast with foil, reduce temp to 350. Set thermometer to 161.
