Place skillet over med heat w/ 1 Tbsp EVOO. Add the bacon to the skillet and cook about 10 min. Remove bacon from pan to paper towel-lined plate and cool. Reserve drippings.....In a large flat dish combine 1 C flour with paprika. Set aside.....Grind toast into crumbs and add melted butter and parsley.....Season steaks w/ salt and pepper, and top w/ bacon, egg, breadcrumbs and watercress. Roll beef into a log around filling ans secure w/ toothpick. Season outside and coat in flour.....Place bacon skillet over medium-high heat. Sear beef until golden brown, 5 mins per side......Add wine and stock to pan. Bring to a boil and cover. Reduce to simmer until meat is tender, about 45 min.....Place medium saucepan over med heat with remaining 3 Tbsp butter. Cook shallots until tender, 5 min. Add remaining 3 Tbsp flour to pan and cook for a min.....Take juices from beef and add to roux, whisking. Bring to boil and simmer until thick, 2-3 min.
Remove from heat and stir in worcestershire, mustard and pickle. Season w/ salt and pepper.
