     Belgin Waffles with Berry Cream

Ingredients
Berry Cream
1 c. whipping cream
1/4 c. powdered sugar
2 c. fresh strawberries, sliced or 1 - 10 oz, pkg. sliced frozen strawberries, thawed and drained
1/2 fresh or frozen (thawed, drained) blueberries
Waffles
2 eggs
1 c. milk
 
2 1/3 c. Bisquick mix
2 tbsp. granulated sugar
1/4 c. veg. oil
Additional Berries, if desired

Instructions
In a chilled med. bowl, beat whipping cream and powdered sugar with electric mixer on high speed until stiff. Fold in strawberries and blueberries.
Heat waffle maker. In a small bowl, beat eggs with electric mixer on high speed about 3 minutes until thick and lemon colored. Stir in milk. On low speed, beat in Bisquick and sugar until smooth. Gently fold in oil.
Pour batter by slightly less than cupfuls onto center of waffle maker. Close the lid of the waffle maker. Bake about 5 minutes or until steaming stops. Carefully remove waffle. Top with berry cream and additional berries.
