     Lemon Cheese Bars

For crust-
1 yellow, white, or lemon cake mix
1/3 cup vegetable oil
1 egg
a dash of lemon juice (omit if using lemon cake mix)
For filling-
8 oz cream cheese, whip until creamy
Then add and mix together until well blended-
1 egg
1/3 cup sugar
2 Tbsp lemon juice
For optional Raspberry Drizzle-
1 package frozen raspberries
Sugar to Taste
Dash of Lemon Juice

Preheat oven to 350. Mix together all ingredients for crust. Reserve 1 cup of mixture and press the rest of the mixture into an ungreased 9x13 pan. Bake for 12-15 minutes until light brown.
Prepare filling. Spread the filling over the crust. Scatter reserved crust mixture over the top. Bake for 13-15 minutes until filling starts to set. Remove from over and allow to cool. For Women's Conference, We tripled this recipe and baked it in a jellyroll pan to serve the larger group.
For raspberry drizzle, place berries in sauce pan and heat and mix until mashed. Add sugar and lemon juice and boil until sugar is dissolved. Drizzle over cut Lemon Cheese Bars.
