     Black Eyed Pea Salad

Ingredients
1 (16 oz) can black eyed peas, rinsed and drained
1 (11 oz) can shoepeg white corn, drained
1 c chopped seeded cucumber (1 small0
1 c finely chopped celery (3 stalks)
1/2 c finely chopped red onion (1/2 medium)
1/2 c finely chopped fresh cilantro
1 (10 oz) can diced tomatoes and green chilies, drained
3/4 c roasted red pepper Italian dressing with Parmesan
1/2 t black pepper
 

Instructions
Combine all ingredients in a large bowl; cover and chill. Serve witha slotted spoon.
