In large mixing bowl. Combine sugar, butter, egg and vanilla. Beat at med. speed until light and fluffy.
Add 2 1/2 c flour, baking powder and salt.
Beat on low speed until soft dough forms.
Divide into thirds
To one third add poppy seeds and almonds extract. Press into pan.
To one third add cherries, 1 T flour and red food coloring. Press on top of poppy seed mixture.
To one third add cocoa. Press on top of cherry.
Cover with plastic wrap. Refrigerate overnight.
Cutting dough into 1/8 inchh thick slices and place on ungreased sheet. Bake 350 for 4 to 6 min.
