     Jodi's Potato Soup

1 T butter
1/2 c. chopped onion
1 garlic clove minced
4 cups of boiling water
2 chicken bouillon cubes
4 cups of sliced potatoes
2 tsp. of salt
1-8 ounce pkg of cream cheese
1tsp. parsley flakes

Melt butter in a large pot. Saute onion and garlic until tender. Add the boiling water with the bouillon cubes. Add potatoes and salt.
Cover and simmer for 20 minutes. Mash potatoes in the broth. In a small bowl add a cup of the warm soup to the cream cheese. Stir until smooth.
Add this mixture and parsley to soup and stir until smooth.
