Salt Zucchini in a bowl and put a plate on top with a weight to get some of the water out of the zucchini. After about an hour drain.
Mix all Ingredients together (minus the oil) in a medium bowl.
Heat a small amount of oil in a skillet over medium-high heat. Drop zucchini mixture by heaping tablespoonfuls, and cook for a few minutes on each side until golden.
