Ingredients
1 lb. white rice
4 eggs, separated
1/2 c. grated parmesan cheese
1 lb. mozzarella cut into 16 sm. cubes
1/4 c. genoa salami, cut into small pieces
1 1/2 c. Italian bread crumbs
vegetable oil
 

Instructions
Cook rice according to box directions. Mix rice, 4 egg yolks and parmesan cheese in large bowl. Form rice mixture into ball enlosing 1 cube of mozzarella and 1-2 small pieces of salami. Beat egg whites Dip each rice ball into beaten egg whites, then coat each ball in bread crumbs.
Heat oil to 350 degrees in large pot. Fry each ball until golden brown.
Serving Suggestions
Cover each arancini with meat or marinara sauce
