3 tblsp. olive oil

2 tblsp. finely chopped shallots
|

1 tblsp. chopped garlic
|
|
1/2 c. burgundy wine
|
|
3/4 c. beef broth
|

3 tblsp. butter
|
|
1 tsp. flour
|
|
2 tsp. parsley
|

salt (to taste)

Instructions |
|
|
Cook meat over med. heat with 2 tblsp. olive oil.
Once meat is cooked, add 1 more tblsp. olive oil.

Stir in shallots, garlic and wine and cook over high heat for 30 seconds.
|
|
|
Add beef broth, salt and pepper and bring to a full boil.
Cook until reduced by half
|
|
|
Add butter, flour, parlsley and mix until melted.
Serve over meat immediately.
