     Madeira Sauce

Ingredients
3 tblsp. olive oil
2 tblsp. finely chopped shallots
1 tblsp. chopped garlic
1/2 c. burgundy wine
3/4 c. beef broth
3 tblsp. butter
1 tsp. flour
2 tsp. parsley
salt (to taste)
 
pepper (to taste)

Instructions
Cook meat over med. heat with 2 tblsp. olive oil. Once meat is cooked, add 1 more tblsp. olive oil.
Stir in shallots, garlic and wine and cook over high heat for 30 seconds.
Add beef broth, salt and pepper and bring to a full boil. Cook until reduced by half
Add butter, flour, parlsley and mix until melted. Serve over meat immediately.
