     Beef/Chicken Chimichangas

Ingredients
1 lb. ground beef or 2 c. diced or shredded chicken
1/2 c. onions, chopped
2 c. shredded lettuce
unbaked tortillas
shredded cheddar cheese
vegetable oil
salsa
sour cream
 

Instructions
Cook chicken or beef with chopped onion in skillet until cooked thoroughly. Spoon meat and onion mixture onto tortilla. Top fillingn with cheese. Fold up tortillas and secure with toothpicks.
In medium side pot, heat vegetable oil to 350. Fry filled tortillas about 1 min. each side. Drain on paper towels.
Keep fried tortillas warm in 300 oven while frying remaining tortillas.
Serve on lettuce mixture with salsa and sour cream
