Mix sugar, sour cream and egg
Beat mixture for 1 min. on med.
Sift together flour, soda, salt and baking powder and add to cream mixture.
Add vanilla
Beat for 2 min. on med.
Stir in coconut
Pour into cupcake wrappers
Bake at 400 for 20-25 min.
