     Chicken Salad Pitas

4 Pitas
2 c. greens (i.e. lettuce)
1 c. Mayo
2 T lemon juice
2/3 t salt and pepper to taste
1 lb. cooked diced chicken breast
2 apples, diced and cored
1/2 C slivered green onions
1/2 C toasted almonds

Cut open pitas. Add greens to them.
Mix Mayo, lemon juice, 2/3 t. salt and a bit of pepper.
Add rest of ingredients, mix well and taste for salt and pepper. Add more mayo if desired.
Add salad to pitas, wrap in plastic and chill. Variations- Roasted red pepper vinaigrette, or sesame ginger dressing instead of mayo mixture. Substitute apples for oranges or pears or raisins. Add different nuts, cheese or tomatoes.
