Mix Mayo, lemon juice, 2/3 t. salt and a bit of pepper.
Add rest of ingredients, mix well and taste for salt and pepper. Add more mayo if desired.
Add salad to pitas, wrap in plastic and chill.
Variations- Roasted red pepper vinaigrette, or sesame ginger dressing instead of mayo mixture. Substitute apples for oranges or pears or raisins. Add different nuts, cheese or tomatoes.
