     Enchiladas Acapulco

Ingredients
1 pound ground beef
1 8 oz. can tomato sauce
3/4 cup chopped green pepper
1 8 oz can kidney beans, drained
1/2 pound Velveeta Mexican cheese spread, cubed
8 6 in corn tortillas
oil
1/2 cup chopped tomato
 

Instructions
Brown and drain meat. Add tomato sauce and 1/2 cup of peppers, cook over medium heat 5 minutes, stirring occasionally.Add bens and 1/4 pound of cheese, continue cooking until cheese is melted. Dip tortillas in hot oil; drain. Fill tortilla with 1/4 cup of mixture and roll up. Place seam side down in a baking dish. Top with remaining mixture. Cover. Bake at 350 for 20 minutes. Top with remaining cheese, continue baking uncovered for 5 to 8 minutes or until cheese is melted. Top with remaining peppers and tomatoes.
