Combine butter, 1/2 cup sugar and brown sugar in a large mixing bowl. Beat at medium speed until creamy. Add egg and vanilla; continue beating until well mixed. Reduce speed to low; add flour, baking soda and salt. Beat until well mixed.

Remove half of dough; set aside. Add peanut butter to remaining dough in mixer bowl. Beat at low speed until well mixed. Wrap peanut butter dough in plastic food wrap. Place reserved half of dough into mixer bowl; add melted chocolate. Beat at low speed until well mixed. Wrap chocolate dough in plastic food wrap. Refrigerate both doughs until firm (2 hours).

Heat oven to 375 degrees. Press about 1/2 teaspoonful each of peanut butter and chocolate doughs together to create marbled effect; roll into 1-inch balls. Roll balls in 1/2 cup sugar. Place 2 inches apart onto ungreased cookie sheets. Bake for 8 to 10 minutes or until set and cookies just begin to crack.

Immediately press 1 chocolate star in center of each cookie. Cool 1 minute; remove from cookie sheets. Cool completely.
