     Mini Poppy Seed Muffins

Ingredients
1-1/3 cups all-purpose flour
2 tablespoons poppy seeds
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/8 teaspoon salt
3/4 cup sugar
2/3 cup butter, softened
2 eggs
1 teaspoon vanilla
 
1/4 teaspoon lemon extract, if desired
1/3 cup lemon yogurt

Instructions
Heat oven to 350 degrees. Line 36 mini muffin cups with paper liners. Combine flour, poppy seeds, baking powder, baking soda and salt in medium bowl. Set aside.
Combine sugar and butter in large mixing bowl. Beat at medium speed, scraping bowl often, until creamy (2 to 3 minutes). Add eggs, one at a time, beating well after each addition (1 or 2 minutes). Add vanilla and lemon extract, mix well. Reduce speed to low; alternately add flour mixture and yogurt, beating well after each addition, just until moistened.
Spoon batter into prepared mini muffin cups. Bake for 15 to 18 minutes or until set and very lightly browned.
