     Chile Relleno Casserole

Ingredients
1 lb ground beef
1 onion, chopped
2 (4oz) cans whole green chili peppers, drained
1 1/2 cups shredded cheddar cheese, divided
4 eggs
1/4 c. all-purpose flour
1 1/2 c. milk
salt and pepper to taste
 

Instructions
Preheat oven to 350 degrees. In a Large skillet over med-high heat, combine the ground beef and onions and saute 5-10 min. or until browned; drain
Arrange 1 can of the chili peppers on bottom of 7x11 baking dish. Sprinkle 1/2 cheese; top with meat mixture. Sprinkle the meat mixture with remaining cheese, followed by the next can of chili peppers.
In med. bowl, combine eggs, flour and milk. whisk until smooth. Pour into baking dish over chili peppers. Salt and pepper to taste.
Bake 45-50 min. (until set). Let cool 5 min before cutting.
