Melt butter in large, shallow sauce pan. Add onion, celery, and bell
pepper. Cook 10 minutes until clear. Add flour and blend well.
Cover and cook 15 minutes.
Add parsley and crawfish tails. Cover and cook for 20 minutes,
stirring often. Add half and half, Velveeta, and garlic (to taste).
Mix well and add salt and pepper to taste.
Cook noodles according to package instructions. Drain and add
mixture. Pour in 3 quart casserole dish. Sprinkle w/ parmesan
cheese and bake at 350 for 12 minutes.
This is great w/ french bread.
-1 loaf french bread
-cut in half
-spread melted butter on inside of each piece
-sprinkle garlic powder and salt to taste on each piece
-sprinkle parmesan
-bake at 350 until cheese is melted
