     Linguini Carbonara

Ingredients
bacon
mushrooms (optional)
olive oil
linguine or other noodle
eggs (yolk)
heavy cream
salt
onion, chopped (optional) 1/2 of a small onion, more for flavoring
garlic,minced ( 1 teaspoon)
 
parmesan and/or romano cheeses (grated or shredded)

Instructions
fry the bacon, drain off the grease.
Bring HEAVILY salted water to boil. While you are waiting for the water to boil heat up some 2 tablespoons of olive oil. Saute garlic and onions until the onions are tender and toss in the mushrooms. Finish cooking until mushrooms are done to your likeness.
Toss in your linguine. DO NOT OVER COOK. They should only take 3-4 minutes in boiling water. Drain the noodles leaving a tad of the water you cooked them in and return to the pot. Add the onions, mushrooms, and bacon. The stove should be on medium low. Stir around until mixed well. If it looks like you have water in the noodles you need to make sure you drain it off a little more.
For the sauce. 3 egg yolks and 1/2 a cup of cream. Wisk together and pour over the noodles. Stir around for about 1 minute over the heat and remove. Sprinkle Parmesan and Romano cheeses (grated or shredded) over the noodles. Make one more toss and serve! --) It's delish.
