Pat chicken dry. If breasts are very thick, I pound them down a little. Place in a bowl.
Pour beaten eggs over chicken. Cover and refrigerate 1-2 hours.

Drain chicken. Dredge in breadcrumbs.
Melt 8 tbsps butter in heavy skillet at medium heat.
Add chicken and cook until brown, about 3 mins per side
Transfer chicken to glass baking dish

Melt remaining 2 tbsps butter in same skillet.
Add mushrooms and cook til soft (about 5 mins).
Spoon mushrooms over chicken; top with cheese
Add broth to baking dish

Bake at 350 deg. until chicken is cooked through, about 20 minutes; Serve hot.
