     Margarita Cake

Category   Desserts - Breads
Sub Category   None

Ingredients
2c. crushed pretzels
1/2c. sugar
1/2c. butter
1box white cake mix
1 1/4c. Margarita Mixer (non-alcoholic)
1/3c. Vegetable oil
3 egg whites
1 container coolwhip or equivalent
1 or 2 (key) limes

Instructions
CRUST Preheat oven to 350F Melt butter in a small saucepan and stir in sugar until dissolved. Pour over crushed (1/8 inch pieces) pretzels and mix thoroughly. Press mixture into lightly greased and floured 13x9 inch pan.
Beat boxed cake mix, margarita mixer, oil, 1 tablespoon lime peel and egg whites with electric mixer on low speed 30 seconds. Beat on medium speed 2 minutes, scraping bowl occasionally. Pour batter over pretzel mixture.
Bake 35 to 40 minutes at 350F or until light golden brown and top springs back when touched lightly in center. Cool completely, about 2 hours. Frost with whipped topping; sprinkle with additional lime peel. I like to use the lime coolwhip, or if I'm serving immediately, to mix a little lime juice in the topping. CAUTION- lime juice will curdle the whipped topping. So be aware of your timing.
