     Mushroom-Chicken Enchiladas

Ingredients
6 ounces chopped cooked chicken breast
1/2 cup (2 ounces) Reduced fat cheddar cheese
1/4 cup fat-free sour cream
2 TBS green or red salsa
1 1/2 cup sliced mushrooms
1/2 cup chopped onion
1 tsp chili powder
4 medium fat-free tortillas
cooking spray
 

Instructions
Preheat oven to 350 F. Combine chicken through chili powder in a large bowl; divide mixture evenly among tortillas and roll up.
Coat a large baking dish with cooking spray; Arrange enchiladas in dish and coat with additional cooking spray. Top with mild salsa and cheese. Bake for 30 minutes or until golden. Garnish with sour cream and salsa if desired. Serve with spanish rice or white rice.
