     Tomato Basil Tortellini Salad

Ingredients
1 pound cheese tortellini
2 c. fresh corn kernels, cooked
1½ pounds fresh tomatoes
¼ c. chopped fresh basil
2 T. chopped fresh parsley
3 T. olive oil
1 T. red wine vinegar
1 clove garlic, crushed
½ t. salt
 
½ t. pepper
2 T. freshly grated Parmesan cheese

Instructions
Cook tortellini; drain and set aside. If using fresh corn, cook corn and remove from ear. Seed and dice the tomatoes.
In same large bowl, add corn, tomatoes, basil, and parsley to the tortellini.
In small bowl whisk oil, vinegar, garlic, salt and pepper; stir into large bowl and toss gently with the Parmesan cheese.
Serving Suggestions
Serve cold or at room temperature.
