Ingredients
1 small eggplant, sliced
2-4 small zucchini
1 green bell pepper
1 red bell pepper
3 c. sliced mushrooms
4 good sized tomatoes
mozzarella cheese
2-3 tbsp. chopped garlic
olive oil
 

Instructions
Slice all veggies 1/2 inch thick. Saute eggplant in garlic and olive oil until brownish.
Layer into baking pan. Starting with eggplant, alternating veggies, then a light layer of cheese. Ending with tomato on top.
bake at 350 until fork pierces veggies easily. Sprinkle final layer of mozzarella. Put back in oven and let cheese brown.
