     Bartlett Pear Pie

Ingredients
Sweet Crust
1/2 cup butter
1 1/3 cup flour
1 egg
Filling
6 Bartlett Pears
2 eggs
1 cup granulated sugar
 
2 tablespoons butter, melted
2 tablespoons heavy cream
1 teaspoon vanilla
1/2 teaspoon grated lemon peel
3 tablespoons all purpose flour

Instructions
For sweet crust, cut butter into flour in a small bowl until mixture is crumbly. Mix in egg. Reserve 1/2 cup of crumbs; pat remainder into bottom and sides of a 10 or 11 inch flan pan with removable bottom.
For filling- peel and slice pears; arrange in crust lined pan. Beat eggs until lemon colored. Beat in sugar. Add melted butter, cream, vanilla, lemon peel and flour; blend well. Pour over pears. Sprinkle with 1/2 cup reserved crumbs from the sweet crust.
Bake in a 425 degree preheated oven for 15 minutes, then reduce oven temperature to 400 degrees and continue baking 25 minutes longer or until filling is set and golden brown.
Serving Suggestions
Enjoy with whipped cream or vanilla ice cream!
