     Mushroom Sandwiches

Ingredients
20 slices thinly sliced bread
2 to 3 tbsp grated onion
1/4 cup butter
3/4 lb mushrooms, finely chopped
2 tbsp flour
1/2 tsp. Tabasco sauce
1 tsp. salt
1/8 tsp. pepper
1/2 cup half and half
 
butter and veg. oil for frying

Instructions
Cut the crusts off the bread slices. Put aside. Saute onion in butter. Add mushrooms. Saute until all moisture is cooked out of mushrooms. Add flour, stir until thick. Add Tabasco, salt, pepper, and then half and half.
Take mushroom mixture off heat and allow to cool about 5 to 7 min. Spread mushroom mixture on half the bread slices, make the sandwiches using the other half of the slices. Once the sandwiches are formed, cut them into triangles or squares, 4 each.
The sandwiches can be made ahead and frozen in an airtight container at this point.
Fry sandwiches in equal parts butter and oil until brown and crisp (about 1 min. each side). Drain excess on paper towel and transfer to a 300 degree oven to keep warm until served.
