2 ham bones or 1 ham bone with some meat left OR a small piece of cubed salt pork
salt and 1 tsp black pepper
1 Tbsp fat (bacon grease works well)
Instructions
Soak beans overnight, or quick soak for 1 hour.
In a pot, heat fat and saute onions, and ham/hock/salt pork. Add garlic and saute 2 minutes more. Add beans and simmer about 2 hours, or till beans are soft and tender, but not mushy.
Add more water as needed, keeping it about 1 inch above beans throughout.
When beans are soft, uncover, add salt to taste and let water reduce into a gravy.
Serve over hot rice.
