     Lime-Coconut Cookies

Ingredients
1/2 cup butter
1 cup sugar
2 eggs
1 tsp cinnamon
1/2 tsp salt
1 3/4 cup flour
1 cup rolled oats
1 tsp lime zest
3/4 cup coconut
 
Instructions
Cream butter and sugar, add beaten eggs. Add sifted dry ingredients alternately with lime juice.
Add coconut and lime zest.
Drop from a tsp. to a greased baking sheet (be careful as this dough has a tendency to spread). Bake at 400 for 10-12 minutes.
