Cook lasagna noodle in boiling water 8-10 min until tender and drain. Rinse spinach; cook covered for 5 min with minced garlic, turning. In saucepan cook mushrooms, carrots, and onions in oil until tender, but not brown. Stir in tomato sauce, paste, olives, and oregano. In greased 9x13 pan, layer half of each of noodles, cottage cheese, spinach, Jack cheese, and sauce mix; repeat layers, reserving several cheese slices for top. Bake at 375 for 30 min. Let stand 10 minutes before serving.
