     Sweet Potatoies-Candied

Ingredients
3 pounds Yams
1 cup light brown sugar
1/2 teaspoon cinnamon
1/4 teaspoon salt
8 tablespoons unsalted butter
3 tablespoon Lemon juice
1-1/2 tablespoons cornstarch
1/4 cup bourbon
 

Instructions
Bring water to boil and boil potatoes 7-8 minutes with lid on until fork tender. Preheat oven to 375 Spray 13 by 9 baking dish with Pam
Cut cooked potatoes in slices 1 inch thick. Place cut side up in pan. Mix in bowl: light brown sugar, cinnamon, salt, melted butter,and lemon juice.
In another bowl: mix cornstarch and bourbon. Mix sugar mixture and cornstarch mixture together. Pour over sweet potatoes.
Bake 375 covered with foil for 50 minutes. Remove from oven, turn potatoes over and bake uncovered for 10-15 minutes. To do ahead: bake, cool and put in refrig covered. Reheat at 350 for 20-30 minutes covered. can be frozen.
