     Ginny's Spanakopita Triangles

Ingredients
2 pkgs frozen spinach (Thawed and completely drained)
4-5 crushed garlic cloves
1 small onion finely chopped in food processor
1 container lowfat cottage cheese (small curd)
3/4 c. feta or goat cheese
1/2 c. low fat shreded mozzarella cheese
3/4 c. ricotta cheese
1 egg (optional)
Salt, Pepper, and Mrs. Dash seasoning
 
1-2 packages refrigerated phyllo dough
melted butter

Instructions
Mix all ingredients except butter and phyllo to make the spinach filling.
Place 2-3 sheets of phyllo dough on dry working space and brush lightly with butter. Place spinach mixture at end of phyllo dough and fold into triangular flag shape.
Place folded triangles on baking sheet and brush with butter. Bake at 350 for 15-20 minutes.
Note- Cover phyllo dough with damp cloth or paper towell when not in use.
