     Lemon Chicken

Ingredients
1/4 cup of vegetable stock
Fresh Thyme and Parsley
1 x lemon
2 x chicken breasts
Salt and Pepper for seasoning
1/4 cup of wine
 

Instructions
Tenderise chicken, season and fry 4 minutes each side. Place chicken into a baking tray. Add wine to chicken pan, add stock and bring to a boil.
Add wine to chicken pan, add stock and bring to a boil.
Pour stock and wine over chicken in tray, add lemon juice, lemon rind, thyme and parsley. Bake for 25 mins at 185.
