Ingredients
Beef Brisket 5-6 lbs each, 2 slabs
1 bottle red wind
2 cups molasses
4 bay leave
4 onions chopped
4 coarsely chopped carrots
10 cloves of garlic
salt, pepper, basil, thyme, anything else you like
 

Instructions
Brown brisket in hot oil, then place in a roasting pan over carrots and onions. Add all other ingredients
Cook at 350 ,covered, for one hour. Then cook another 1/2 hour uncovered. Then flip, baste, cover etc. Alternate covered and uncovered for 3 1/2 - 4 hours. If liquid evaporates add water.
Skim the fat off then slice the meat (against the grain). Puree juices (take out bay leaves) and use for gravy.
Serving Suggestions
Serve fresh or refrigerated. Its also good with mashed potatoes
