Using the tip of a knife, cut several slis into each potato; push garlic slices into slits. Wrap potatoes in aluminum foil and bake 40 minutes or until soft.
Halve each potatoe lenghwise, making sure not to cut all the way through. Season potatoes with salt and pepper to taste. Add 1 Tbsp butter and 2 Tbsp blue cheese to each potato.
Heat 5 minutes more. Garnish with chives.
