Place the mango, ice, fruit juice, and strawberries into a blender or
the bowl of a food processor and purée for 30 to 45 seconds, until
smooth and creamy. Pour into a glass and garnish with mint sprigs.
Notes - Passion fruit juice is extremely fragrant and bold
flavored. The sweet mango pairs well with strawberries and
provides much of the creamy consistency for this drink. If you're
freezing your own cut mango for this drink, use only a very ripe
mango; it will scream with intense flavor. You may also purchase
diced frozen mango or peaches.
