     Chopped Salad

Ingredients
2 Tbsp balsamic vinegar
1/2 heaping tsp dijon mustard
1/2 tsp kosher salt
1/4 tsp freshly ground pepper
4 Tbsp canola oil
3 cups finely chopped romaine lettuce
2 ripe beefsteak tomaoes, seeded and finely diced
1/2 cup canned red beans, rinsed and drained
1/2 cup canned chickpeas, rinsed and drained
 
1/2 cup nicoise olives, pitted and coarsely chopped
3/4 cup mix of 1/2 inch cubes reduced fat white cheddar cheese
and 1/2 inch cubes reduced fat monterey jack cheese

Instructions
In a blender, blend the vinegar, mustard, salt and pepper until smooth. With the motor running, slowly add the oil and blend until emulsified. Set aside. In a large bowl, toss the lettuce, tomtoes, beans, chickpeas, olives, cheeses together, dress lightly with the balsamic vinaigrette.
