     Two Bean Rice Salad

Ingredients
3 cups cooked rice
1 (15 oz.) can pinto beans, rinsed and drained
1 (15 oz.) can black beans, rinsed and drained
1 (10 oz.) package frozen peas, thawed
1 cup sliced celery
1 medium red onion, chopped
1 (4 oz.) can chopped green chilies
1/4 cup chopped fresh cilantro
1/2 cup white wine vinegar
 
1/4 cup olive oil (I use less)
2 T. water
1/2 t. garlic powder
salt/pepper to taste

Instructions
In a large salad bowl, combine the rice, beans, peas, celery, onion, chilies and cilantro; mix well. Combine the remaining ingredients in a jar with tight-fitting lid; shake well. Pour over rice mixture; toss to coat. Cover and refrigerate for at least 1 hour. Enjoy!
