Toss cut potatoes in oil until all pieces are coated. Salt and pepper
generously and toss.
Place in 9x13 baking pan, skin side facing up. If desired, sprinkle
rosemary over potatoes. Cover pan with aluminum foil and bake at
425 degrees for 20 minutes
Remove aluminum foil, heat oven to 500 degrees and cook for an
additional fifteen minutes. Flip potatoes and cook for another 15
minutes.
For strong garlic flavor, puree garlic and put in medium bowl.
scrape potatoes out of pan and into bowl and toss.
