     Sirloin Tips and Mushrooms

Ingredients
1 1/4 lbs sirloin, cubed 1 inch
1 clove garlic
3/4 lb fresh mushrooms, sliced
1/3 cup water or beef broth
1/2 cup dry red winer
1 1/2 teaspoon soy sauce
2 teaspoons Dijon style mustard
1 teaspoon cornstarch
1/2 cup chopped parsley
 
1/2 cup whipped cream

Instructions
Coat a wide skillet with non stick spray. Brown meat, add garlic. When browned, remove to casserole with a cover on it. Add 1/4 cup wine to skillet and saute mushrooms and add to meat. Cover. Bake slowly for 1 hour at 275 degrees, until meat is tender. Meanwhile, add water or broth, remaining wine and soy sauce to the skillet. Boil stirring up the brownings until reduced to a glaze. Blend mustard, cornstarch and cream. Add to skillet. Boil until thick. Pour off juices from meat into the sauce in skillet. Boil, whisking until smooth and thick. Blend with meat, sprinkle with parsley.
