     Red and Green Peppers with Beef Tips

Ingredients
1 1/2 lbs beef tenderloin or boneless top loin 1/2 inch thick
1 1/2 cup beef broth
2 tablespoons ketchup
1 teaspoon salt
1 small clove garlic, minced
1 medium onion, chopped
1 medium red bell pepper, cut in strips
2 tablespoons flour
hot cooked noodles
 

Instructions
Cut beef across grain into strips, about 1 1/2 inch x 1 1/2 inch. Partially freeze beef for easier cutting. Cook and stir beef in butter in 10 inch skillet over low heat until brown. Reserve 1/3 cup of the broth. Stir remaining broth, ketchup, salt and garlic into skillet. Heat to boiling, reduce heat, simmer, covered until beef is tender, about 10 mins. Stir in onion and peppers, simmer, covered until tender, about 5 mins. Shake reserved broth and flour in tightly covered container, gradually stir into beef mix. Heat to boiling, stirring constantly. Boil and stir for 1 minute. Serve over hot noodles.
