Using a sharp knife make 1/4 inch slashes in the rib meat between the bones, without cutting through. Spread all but 2 tablespoons of the spice rub over the ribs and into the slashes and let sit 10-15 minutes.
Meanwhile, in a small pan, combine the hoisin sauce, ketchip and te remaining spice rub and bring to a boil. Cook 1 minute, then transfer to a small bowl.
Heat grill, brush ribs with oil and grill over moderate heat turning frequently, until the ribs are sizzling and cooked through about 25-30 minutes. Brush the ribs with 1/3 of the sauce and grill 2 minutes longer.
Transfer ribs to cutting board and cut between bones, serve with remaining sauce.
