Add oil and onion cook till softened (4mins) add garlic ginger and curry cook till incorporated. Add chtuney and stock pring to a boil. Reduce and simmer (5/7mins). Add salt and pepper. Strain and use.
If cooking with mussels once sauce is drained pour about a cup back in to a big pot put in mussels and cover. Cook (3/4mins) and check once mussels are open pull them out of the pot.
